
Roast Cauliflower with Caper Dressing
Serve up your cauliflower with a difference - bake and add a tasty sauce. A great addition to your roast meat, adds a lot of flavor to your meal
Ingredients
- 1 whole cauliflower
- 4 tbsp olive oil (extra virgin)
- 1 whole lemon
- 2 tbsp capers
- 3 sprigs parsley
- 1 medium red chilli (optional)
Instructions
- Heat the oven to 400F
- Take a large baking tray and line with baking paper
- Cut the cauliflower into florets, and spread place them out on the baking tray, coating them with 11/2 tbsp the olive oil. Season to taste and roast in the oven for 25 minutes
Prepare the dressing
- Rinse and drain the capers
- Zest and juice the lemon
- Deseed and finely chop the red pepper (if required)
- Chop the parsley leaves
- Put all these ingredients in a bowl along with the remainder (2 1/2 tbsp) of the olive oil and mix well
Serve
- When the cauliflower is cooked, arrange in a serving dish and pour the dressing over the top. Serve and enjoy
