Scallion, Bacon & Caramelized Onion Dip

This dip is delicious chilled and served up with tortilla chips, water biscuits, carrot sticks or celery. Serve up at your next party

Ingredients
  

  • 3 Scallions
  • 1 tsp apple cider vinegar
  • 1 3/4 cups sour cream
  • 1/2 tsp Cayenne pepper
  • 6 rashers bacon

Caramelized Onions

  • 2 large onions
  • 1 tbsp olive oil
  • 1 tsp brown sugar

Instructions
 

  • Cut the bacon in to 1/4" pieces and cook until crisp
  • Separate the scallions by white and green parts, and mince them up

Caramelize the Onions

  • Chop the onions and put in to a wide, thick bottomed saute pan, which has been coated with olive oil, but on medium heat
  • Spread the onions out and coat them with oil and allow them to soften
  • After 10 minutes add a sprinkle of salt and the sugar to the onions and stir, add a little water to stop them sticking
  • Let the onions cook for a further 30 minutes or so, stirring occasionally, until they are brown

Make the Dip

  • Take a ceramic bowl and whisk together all the ingredients, season with salt and pepper to your liking
  • Before serving pop it in the fridge for a few minutes to cool down

Notes

This will keep in the fridge for up to 3 days
